Chicken And Veggie Gluten Free Spring Rolls
Love this cool refreshing meal! These gluten free spring rolls were seriously SO yummy! Super Mindy made these for the team one day when the whole crew was here filming and they were SO delicious. I don’t think there was one bit left over.
10 spring roll rice paper wrappers
2 cups cooked shredded chicken
1 large cucumber, julienned
1/2 of a large red pepper, julienned
1/3 cup chopped purple cabbage
1 avocado, sliced
½ cup fresh cilantro
10 green lettuce leafs
Prepare the rice paper wrappers by dipping the rice paper wrapper into warm water for 15-20 seconds, or whatever the package directions say. Immediately remove from the water and place on a flat surface, such as a cutting board. Dry the wrapper slightly. Then fill the rolls. Place a few sticks of carrot, cucumber, red pepper, and a sprinkle of cabbage on top of the bottom 1/3 of the rice paper. Add in the protein of choice (we used chicken). Next, add a few slices of the avocado and sprinkle on some cilantro. Lay a lettuce leaf on top, and be sure they are not too full that you cannot roll them. Roll everything up tightly – the rice paper should stick to itself. Store them in a sealed container and refrigerate until you are ready to enjoy!
