Healthy, Internationally Inspired Recipe #1 – Asian Shrimp Lettuce Wraps

If you’re familiar with my Stronger program, you may have already made these Healthy Asian Shrimp Lettuce Wraps. If you haven’t, YOU MUST! This recipe is gluten-free, unprocessed, delicious AND easy-to-make. Whip up this yummy international inspired meal in only 10 minutes.

Healthy Internationally Inspired Recipes - Healthy Asian Shrimp Lettuce Wraps with Natalie Jill

Ingredients:
1 tbsp diced ginger
1 tbsp minced garlic
2 tbsp chopped cilantro
1 tbsp water chestnuts
5-8 oz shrimp
1 tbsp coconut oil
6 romaine lettuce leaves

Directions:
Heat coconut oil in a skillet.
Saute ginger and garlic until garlic is golden, about 1 minute.
Add the shrimp and stir fry until shrimp turn opaque.
Cut shrimp in half to spread easier amongst lettuce wraps.
Top with water chestnuts and cilantro then enjoy!

Ingredients:
1 tbsp coconut oil
4oz ground turkey
½ onion, sliced
1 tomato chopped
salt & pepper to taste
2 tbsp cilantro chopped
1 tbsp goat cheese
4 romaine lettuce leaves

Directions:
Cook turkey in a non-stick skillet until brown (about 10 mins). In a separate skillet, saute onion with 1 tbsp coconut oil & salt/pepper until soft (about 10 mins).  Line a bowl with your romaine lettuce leaves, add your turkey, add your goat cheese and then top it off with the hot onions to help goat cheese melt. Top with tomato and cilantro! YUM!

Ingredients:
4 oz cooked shrimp, chopped
½  fresh lime, juiced
½  orange, juiced
1 jalapeno, diced
½ medium red onion, diced
¼ cup unsweetened coconut milk
1 tsp pink Himalayan rock salt
1 cup cantaloupe, chopped
5 large basil leaves, chopped finely
¼ cup cilantro leaves, chopped finely

Directions:
Mix & let sit for 30 mins.

Enjoy!
