Healthy Strawberry Cake
Check out this super easy, no bake, vegan, raw healthy strawberry cake! Yes I said it! This healthy strawberry cake is fairly guilt-free…but don’t eat too many just because they are minis! 🙂 They are still a dessert.
I wanted to share this recipe with you here because so many of you asked me to when I went live in this video! (And YES, we had champagne as a result of the registration link breaking for my Fat Loss Academy! YIKES! But it’s up and running now, so if you haven’t signed up, GO HERE)
1 cup raw almonds
7 dates, pitted
1 cup water
1 1/2 cups cashews (soaked in water overnight)
1 1/2 cups fresh strawberries
1/4 cup maple syrup
1/3 cup coconut oil
In a blender or food processor blend almonds, dates and 1 cup water. When blended smoothly, pat down at the bottom of your muffin mold. Place in refrigerator while you make the frosting. First, drain the water from cashews. In a blender or food processor, blend cashews, fresh berries, maple syrup, and coconut oil. Top crusts in the muffin molds and chill overnight in the refrigerator.
