Keeping it short and simple for you this week. I know the holidays are basically here which means joy, chaos, family dynamics, and the annual tradition of pretending we didnāt just eat half the pumpkin pie before dinner š«¢No judgment. I fully support seasonal dessert amnesia.
Since the holidays can feel like a cocktail of magic and madness, hereās your reminder that self care is not selfish care. Take a minute for yourself. A quiet moment. A journal page. A nice bath. A walk by yourself where you pretend you cannot hear anyone calling your name. When we get consumed by tending toĀ everyone elseāsĀ needs, we forget that we can actually show up as much better humans when we have taken a moment for ourselves to breathe (even if itās just a tiny moment, it all counts).
I am not going to be doing a big Thanksgiving this yearā¦but I need you to know something about me. Pumpkin Pie is my absolute favorite food of ALL time! š„§ If someone told me to choose one food for the rest of your life, I would pick pumpkin pie without even blinking. So of course I WILL be making that (testing a new gluten free recipe this year that I will share with you at the end of this post). If it fails we blame the recipe. If it succeeds I take full credit š and then will have to refrain from making a second one lol.

She is in her 60s and super fit and her story is the kind you listen to while you are stuck in airport security or trapped in holiday traffic. š„§Ā GLUTEN FREE SIMPLE PUMPKIN PIE RECIPEĀ š„§
Ingredients for the crust
⢠1 and 1 2 cups almond flour
⢠1 tablespoon coconut flour
⢠2 tablespoons coconut oil or butter melted
⢠1 tablespoon maple syrup
⢠Pinch of salt
Ingredients for the filling
⢠1 can pumpkin puree 15 oz
⢠2 eggs
⢠1 cup full fat coconut milk from a can shaken well
⢠1 2 cup maple syrup
⢠1 teaspoon vanilla
⢠1 teaspoon cinnamon
⢠1 2 teaspoon pumpkin pie spice
⢠1 4 teaspoon salt
Instructions

Preheat oven to 350

Mix crust ingredients in a bowl until a dough forms. Press it firmly into a pie dish. Bake crust for 10 minutes to set it.

In a separate bowl whisk together all filling ingredients until smooth.

Pour filling into the pre baked crust.

Bake 45 to 55 minutes until the center is mostly set but still a little wiggly.

Let cool completely before slicing. If you cut it early do not blame me blame the pie š«¢
