Quick Kale Salad
Love whipping up this super quick kale salad for lunch! Kale is a wonderful super food to add to your diet. High in fiber, iron, antioxidants, calcium, vitamin a and c and many more benefits to this super green!
1/4 cup olive oil
Juice of one lemon
1 tsp minced garlic
1/4 tsp Himalayan salt
1/8 tsp fresh ground black pepper
1 bunch dinosaur kale, finely chopped
1 cup shredded chicken
1 ripe avocado cut into cubes
In a medium bowl whisk together olive oil, lemon garlic, salt and pepper.
Add the chopped kale and massage dressing into kale, this helps soften the kale a bit, let stand 5 minutes. Next add in the avocado and the chicken, mix until all ingredients are well coated with the dressing.
