Country Sweet Potato Hash Breakfast
Set the tone for an awesome, healthy, fueled day with this delicious and energizing sweet potato hash breakfast!
3 teaspoons of coconut oil
1 small sweet potato, diced
1/4 purple onion, diced
1/2 green bell pepper
Himalayan sea salt and ground pepper to taste
Preheat oven to 425f. Dice up onion, sweet potato, and green pepper. Put in a medium mixing bowl with 3 teaspoons coconut oil, salt, and pepper. Toss. Lay potato mixture on a cookie tray covered with parchment paper. Bake for 25 mins. Fry egg in 1/4 teaspoon coconut oil while potatoes cook. Let egg cook on each side about 3 minutes, depending on how cooked you like the middle of your egg.
