Three Amazing Healthy Asparagus Recipes
Asparagus is popular for a reason! Not only is it tasty, but it is packed with nutrients that are beneficial to your body. Just to name a few: asparagus has fiber, folate, vitamins A, C, E and K. I put together these three amazing healthy asparagus recipes to help make sure you can get this delicious and nutritious veggie into your body!
Healthy Asparagus Recipe 1: Fried Egg on Asparagus
5 asparagus spears
1 teaspoon ghee
Pinch of pepper and pink Himalayan rock salt
Directions: Saute asparagus in ghee with salt & pepper until tender. Remove asparagus, and using the same pan, fry the egg. Top asparagus spears with the fried egg.
Healthy Asparagus Recipe 2: Asparagus & Shrimp Stir Fry
4 oz raw shrimp
6 asparagus spears
1 tsp minced garlic
1 tsp minced ginger
¼ cup fresh lemon juice
1 tbsp coconut aminos
1 tbsp coconut oil
Salt & pepper to taste
Directions: Mix lemon juice & coconut aminos – set aside. In a pan, heat 1 tbsp coconut oil and add raw shrimp. Cook until slightly pink, then place on plate and set aside. In the same pan, add the asparagus. Season with salt & pepper and cook until tender. Then add garlic & ginger and cook for another 8 mins. Pour in lemon juice mix, add shrimp back in and cook until shrimp is fully cooked.
Healthy Asparagus Recipe 3: Asparagus Berry Spring Salad
1 handful baby spinach
½ cup mixed raspberries and blackberries
¼ red onion
½ cup asparagus, cut *cook asparagus prior – roast in oven at 350 degrees for about 10-15 mins*
4 oz shredded cooked chicken
1 tbsp crushed pistachios
1 tbsp goat cheese
Make your own berry vinaigrette by blending 1 tbsp olive oil & 1 tbsp apple cider vinegar & 1/4 cup berries
Toss everything together in a bowl and sprinkle with cheese.
