Unprocessed Gluten Free Cheesy Breadsticks
Gluten free cheesy breadsticks, AND unprocessed?! Sounds crazy right? Well, it’s true – THIS IS REAL LIFE, and I am here to share MY version of cheesy breadsticks recipe with you in time for you to celebrate January 20, National Cheese Lover’s Day!
1 head cauliflower, large
2 cups mozzarella cheese or mexican cheese blend
4 cloves of garlic
2 tsp Italian seasoning blend or oregano
Himalayan salt and fresh ground pepper to taste
Preheat oven to 375 degrees F. Rinse cauliflower, remove outer leaves and separate into florets. Place florets in blender or food processor and process until “rice” texture. Some coarse pieces are fine. Place in a baking dish and bake for 20 mins. Remove from the oven and transfer to a bowl lined with a paper towel. Let the cauliflower cool down a little bit. Fold the paper towel over cauliflower and squeeze out excess liquid.
Increase oven temperature to 450 degrees. Combine cauliflower, eggs, 1 cup cheese, seasoning blend or oregano, black pepper and himalayan salt and mix well.
Place cauliflower on a baking sheet lined with parchment paper. Flatten into a rectangle, maybe to about ¼” thickness.
Bake for 18 minutes, remove from the oven and top with remaining 1 cup cheese (you can always add more if you like). Bake for a few more minutes, you can turn on broiler and cook until cheese is golden brown. Cut into bread sticks, the size is up to you. Best if you serve warm with a dipping sauce of your choice.
