Zucchini Noodles With Shrimp

Craving pasta? Try this guilt-free substitute! Zucchini noodles! You can also make noodles from many other veggies — beets, sweet potatoes, cucumbers (for cold salads) — you name it. In order to achieve these noodles, you can use a spiralizer, or purchase them already in noodle form from your local health food store.

Ingredients:

  • 4 oz shrimp
  • 1 zucchini, sliced into noodles
  • 1 tsp minced garlic
  • 1/2 jalapeno, chopped
  • 1/4 tsp lemon zest
  • 2 tbsp coconut oil
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp ground pepper
  • 1/4 tsp himalayan salt

Directions:

Slice your zucchini and set aside. In a small bowl combine garlic, jalapeño, parsley, lemon zest, salt, pepper and 1 tbsp of coconut oil. Pour the mixture over the shrimp and gently toss. Let marinate for about 10 mins. in a large skillet, heat 1 tbsp coconut oil over medium heat. add the shrimp with marinade to skillet. cook shrimp for about 3-4 mins until pink. in the same skillet add zucchini noodles and toss until heated through.
