Healthy Cauliflower Rice Recipe

Yes! Now you can have your rice on the side without robbing the carb bank! šŸ™‚ Pair this yummy cauliflower rice recipe with your favorite protein for a full meal, without the guilt!Ā 

Ingredients:
1 head cauliflower
1 tablespoon ghee
Ā½ yellow onion, chopped
Ā½ jalapeno seeded and chopped
1 lime, juiced
Ā½ cup cilantro, chopped
Ā½ teaspoon himalayan salt
Ā½ teaspoon pepper

Directions:
Cut the cauliflower into small florets. Pulse in two batches in blender or food processor until cauliflower resembles rice (or to make this really easy, you can buy already “riced” cauliflower). Preheat 1 tablespoon ghee in a large skillet. Cook onion in the pan over medium-high heat, stirring occasionally until onion turns translucent. Add cauliflower and jalapeno to theĀ pan, stirring occasionally, until warmed through. Mix in lime juice and add the cilantro. Stir until well blended. Season to taste with salt and pepper.
