Healthy Cauliflower Rice Recipe

Yes! Now you can have your rice on the side without robbing the carb bank! 🙂 Pair this yummy cauliflower rice recipe with your favorite protein for a full meal, without the guilt! 

Ingredients:
1 head cauliflower
1 tablespoon ghee
½ yellow onion, chopped
½ jalapeno seeded and chopped
1 lime, juiced
½ cup cilantro, chopped
½ teaspoon himalayan salt
½ teaspoon pepper

Directions:
Cut the cauliflower into small florets. Pulse in two batches in blender or food processor until cauliflower resembles rice (or to make this really easy, you can buy already “riced” cauliflower). Preheat 1 tablespoon ghee in a large skillet. Cook onion in the pan over medium-high heat, stirring occasionally until onion turns translucent. Add cauliflower and jalapeno to the pan, stirring occasionally, until warmed through. Mix in lime juice and add the cilantro. Stir until well blended. Season to taste with salt and pepper.

Enjoy this served with a protein for a complete meal! This is a great alternative to rice in dishes regardless of what “diet” you follow — whether you are eating unprocessed, plant-based, or paleo! It’s also a great item to cook if you’re wanting to prep some quick grab and go meals for the week. Store it in it’s own container, and mix with different toppings every time! Feel free to add more veggies, too.
