Happy Holidays 2012

From my family to yours, I would like to wish you Happy Holidays!

Here are two guilt free recipes for you and your family to enjoy from my new Stay Lean Recipe Book 2.

Recipe 1 – Slow Cooker Apple Oatmeal

Slow Cooker Apple Oatmeal

This is a great recipe to accompany a nice serving of egg whites or with a protein shake.  It is also very yummy with a little sugar free syrup.

Ingredients:

  1. 5 small apples peeled and chopped into small cubes (or as many as you need to yield two cups of raw apples)
  2. 3 Tablespoons Cinnamon
  3. ¼ Teaspoon Nutmeg
  4. ¼ Teaspoon All spice (or apple pie spice)
  5. 2 Cups Steel Cut Oats
  6. 3 Cups Almond Milk
  7. 3 Cups Water
  8. 2 Tablespoon Vanilla Extract

** If you are not a fan of apples, you can use peaches or omit fruit. **

Directions:

  • Coat your slow cooker with Coconut Oil DO NOT SKIP THIS STEP !!
  • Combine ingredients from steps 2-5 in a bowl and mix well, then add to slow cooker
  • Next add the apples to the slow cooker
  • Mix the remaining ingredients in a bowl and then pour into slow cooker
  • Set the slow cooker on medium and allow to cook for 7-8 hours

** IMPORTANT **

You do not need to remove the lid of the slow cooker at any time. It does not need to be stirred; stirring this recipe will ruin it.  When it is done and has been allowed to cool for several hours when you cut into it, the bottom at first glance will look burned but it is actually the Spices that have settled to the bottom and it looks almost like a crust.

Also, I think this dish presents best when it has had time to cool completely (and it tastes better) so that you can cut it into pie slices like I did in the photo. You do not have to do that if you are not worried about presentation, you can just spoon it out.  Make sure you spoon it out so that you get 8 servings out of this.

Recipe yields 8 servings

177 Calories, 1.25g Fat, 30g Carbohydrates, 5g Protein

Recipe 2 – Chocolate Banana Protein Brownie with Chocolate Ganache

Chocolate Banana Protein Brownie with Chocolate Ganache

Ingredients:

  1. 6 Scoops Vanilla Whey Protein
  2. 1 Cup Old Fashioned Oatmeal
  3. 2 Tablespoons Cocoa
  4. 4 Small Bananas mashed
  5. 2 Whole Eggs, 1 Egg White
  6. 2 Tablespoons Vanilla
  7. 1 ½  Cups Almond Milk

Directions:

  • Preheat oven to 350*
  • Mix ingredients 1-3 together in one bowl.
  • Mix ingredients 4-7 in another bowl and then add to dry ingredients and mix with a wooden spoon.
  • Pour mixture into a greased 9 x 9 pan.
  • Bake for 15 minutes at 350*

** Optional…. Melt 2 Tablespoons dark semi sweet chocolate chips and spread on top of cooled bars. This is a great way to get children to enjoy a healthy treat.

** These are really yummy for breakfast or a snack when you break it into pieces in a bowl, heat for about 20 seconds then pour almond milk over brownie and enjoy !

Recipe Yields 18 brownies
