Healthy Macaroni And Cheese

I know you’re probably like what the heck is healthy macaroni and cheese? Well, let me tell you. A great replacement for starchy carbs is cauliflower! For the “cheese” sauce well, I blended some yummy veggies and seasonings. Try replacing your guilty indulgence with this healthy, guilt free, gluten free macaroni and cheese!

Ingredients:
1 head of Cauliflower
1 small butternut squash cut into cubes
1/4 cup water
1 Carrot peeled and diced
1/2 small Sweet Onion diced
2 tbsp ghee
1 tsp minced garlic
1 tsp dijon mustard
1/2 can Coconut Milk
1 Egg Yolk
2 scallions thinly sliced to garnish
Salt & Pepper, to taste

Directions:

Cut the stalks and leaves off of the cauliflower and break it into small pieces. Add the cauliflower and water to a large sauté pan. Place on medium heat and cover with a lid. Let the cauliflower steam inside the pan for about 10 minutes, until mostly tender. Turn heat off, cover, and keep warm until ready to toss with the cheese sauce.

Cheese:

Heat the butter in a saucepan over medium/high heat. Add the squash, carrot, onion, garlic, mustard, and salt to the melted butter. Sauté for 5 minutes, or until onion is translucent. Add the can of coconut milk to the saucepan and bring to a simmer. Allow to simmer for about 10 minutes, or until the vegetables are tender and the coconut milk has reduced and is thick. Pour the vegetables, egg yolk and coconut milk into a blender and puree until very smooth. Then pour and toss over cauliflower!
