Healthy Snacks That Are Easy to Make

‘Tis the season of ballgames, BBQ’s, and fun! So I put together these easy to make healthy snacks for my followers who are trying to meet their health goals…while STILL enjoying the party munchies!

Healthy Snacks #1: Sweet Potato Skins

Yields 8 potato skins – serves 8 people

Ingredients:
4 sweet potatoes
1 tbsp olive oil
¼ cup coconut milk
¼ tsp himalayan salt
pinch of ground pepper to taste
1/2 cup shredded mozzarella cheese

Directions:
Preheat oven to 400F degrees. Line a large baking sheet with parchment paper. Pierce each sweet potato a few times and bake for 40-50 minutes, or until soft. Allow the potatoes to cool slightly. Slice potatoes in half lengthwise. Reduce oven temperature to 375F degrees. Scoop out sweet potato flesh, leaving a thin layer of sweet potato inside, and add flesh to a medium bowl. Place skins back on the baking sheet face up, drizzle with olive oil and bake for 15 minutes. Mash the sweet potato flesh with milk, salt, and pepper until smooth and creamy. Fill each with mashed sweet potato and top each with cheese. Bake for 15 minutes until the cheese is melted.

Healthy Snacks #2: Jalapeño Poppers

Ingredients:
4 jalapenos
2 tbsp goat cheese
4 slices of turkey bacon

Directions:
Preheat oven at 400F degrees.Slice jalapenos in half length wise. Stuff with goat cheese. Put jalapeno back together and wrap with a slice of uncooked turkey bacon and put a tooth pick through to hold it. Place each right on foil and bake for 26 mins – broil for the last minute. You can keep in longer depending how crispy you like your bacon. I promise these are SO delicious! Even my dog, Bean, thought so. She stole one right off the table! LOL

Ingredients:
2 zucchinis
¼ red onion diced
½ cup diced cherry tomatos
¼ cup olives
2 tbps mozzerlla
1tbs fresh cut basil


Directions:
Preheat oven 400F degrees. Cut zucchini length wise & scoop out seeds. Cut a sliver off bottom so they lay flat. Top with cheese then veggies then bake for 25 mins. Top with basil then serve. They seriously taste like a great serving of Italian food without the guilt!
