Balsamic Roasted Carrots
Because my Carrot Fries recipe was so popular I wanted to give you another beautiful (and delicious) carrot recipe. Surprise your friends and family with this delicious side dish. These balsamic roasted carrots are the perfect balance of fresh, hearty, savory, and delish!
10 medium sized carrots, skinned
1 tbsp avocado oil
2 tbsp goat cheese
1 tbsp balsamic reduction
Directions: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Lay carrots on parchment paper. Brush carrots with avocado oil. Roast in the oven for 30 minutes. Top with goat cheese and fresh parsley. Put 1 tbsp balsamic vinegar on the stove. Boil for 5-6 minutes until thick then drizzle on top.
